Curve-toothed Geometer Moth



 You might think this is a leaf stuck to the side of the house. But, in fact, it is a curve-toothed geometer moth. It's just so neat how close it resembles a leaf. There are 3 right there together. (Not pictured) Another neat thing is, when they are in the larvae stage, they look like a small twig. No kidding! Only God can do that. #WiregrassCritters @Critters in the Wiregrass

Venom used in heart drugs


 February is American Heart Month! Did you know that rattlesnake venom is an important component of life-saving medication used to treat heart disease?! 

Integrillin is an antiplatelet drug that is used to treat acute coronary syndrome and to widen coronary arteries to prevent blood clots during heart attacks and other cardiovascular episodes. It is derived from a protein called barbourin that was discovered in the venom of the dusky pygmy rattlesnake and has saved countless lives!

BTW, the Dusky is my favorite little rattlesnake. 

A good snake is a live snake. A good human is an educated human!!

Cola Barbecue Sauce

 


Homemade Cola BBQ Sauce

Ingredients...

4 cloves of garlic, peeled. 1/4 teaspoon kosher salt, plus some for the garlic. 3 cups of cola. 1 1/2 cups ketchup. 1/4 cup cider vinegar. 2 tablespoons Worcestershire sauce. 1 tablespoon chili powder. 1 teaspoon ground pepper. 1/2 teaspoon hot sauce. 1/4 teaspoon ground allspice. 1 1/2 tablespoon fresh squeezed lime juice.

Directions...

Smash the garlic cloves, sprinkle with a generous pinch of salt, and, with the flat side of a large knife, mash and smear mixture to a coarse paste. 

Stir garlic paste, the 1/4 teaspoon salt, cola, ketchup, vinegar, Worcestershire, chili powder, 1 teaspoon black pepper, 1/2 teaspoon hot sauce, and allspice together in a small saucepan. Bring to a boil, reduce heat, and simmer until thickened, about 45 minutes. Allow to cool slightly, stir in the lime juice, and season with black pepper and hot sauce, to taste. 

Know-How: Barbecue sauces are all about balance: a sweet note offset by sour with a jolt of spice, all of which flourish in a cloud of smoke. There are lots of ways to work this magic-thick, thin, and in-between. Concocting a signature sauce is compulsory in some barbecue circles. Start with this basic riff and play with variations to suit your style.

Campfire foil meals


Campfire foil packets are fun and easy way to make dinner at home or at camp. We like to use sausage but not just any kind, we like Conecuh Sausage. So, grab some sausage, whatever you like, potatoes, carrots, onions, bell peppers, and some seasoning, or whatever you want in it, for these fun Campfire Packets. You can pre make them, so they are ready to throw on the grill or campfire for a quick camping or summer dinner.

Sausage – You can use smoked sausage, andouille sausage, hot dogs, or whatever you prefer.

Potatoes – Any type of potatoes, russet, Yukon, or red. I like to use smaller potatoes, so I don’t have to cut them up before cooking.

Carrots – I like to use baby carrots. However, if you want to cut up carrots, do it how you want to. 

Onion – I like to use either a white, yellow, or sweet Vidalia onion.
Bell Peppers - green ones.

 Olive oil – I used olive oil. However, you could use avocado, canola, or vegetable oil.

Seasonings – I really like the Everglades original but whatever you prefer.

White wine or chicken broth – If you have white wine that is great. If not, use chicken broth. For moisture to steam and flavor. Can also add thyme.

Sausage. Divide the sausage between the 4 pieces of tinfoil and place in the middle of the foil.

Vegetables. Divide the vegetables between the foil packets, and sprinkle the ranch dressing over the vegetables, then drizzle a tablespoon of oil over each packet of vegetables.

Thyme. Add a thyme sprig to each packet and carefully pull up the sides of the tin foil and add a tablespoon of white wine to each packet.

Wrap. Pull two sides together in the middle and fold down tightly. Fold the ends up tightly to seal.

Grill. Place on the grill and close the lid. Cook for 10 minutes, then turn over and continue cooking for 8 to 10 minutes until vegetables are tender.

Open. Remove and CAREFULLY open the top. CAUTION: packets contain hot steam!

These are easy and quick to make and can be changed up.  If you prefer beef, you can use a homemade hamburger patty or substitute meatballs. You can add any vegetables that you like – cabbage, corn on the cob pieces, cauliflower, broccoli, etc. This can also be frozen.  Cool completely and remove from the foil packet. Place in a Ziplock bag or air-tight container and freeze for up to 3 months. Thaw and heat before serving. These are a great option when you are camping. The packets can be made a day or two before cooking and stored in the refrigerator till ready to grill.


Stuffed Pepper Casserole



Ingredients:

1 lb ground beef

2 cups cooked rice

1 onion, chopped

2 bell peppers, chopped (any color)

1 can (14.5 oz) diced tomatoes, undrained

1 can (8 oz) tomato sauce

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon black pepper

1 1/2 cups shredded cheddar cheese

Fresh parsley, chopped (for garnish)

Instructions:

Preheat oven to 350°F (175°C).

In a large skillet, cook ground beef and onion over medium heat until meat is no longer pink; drain excess fat.

Stir in the chopped bell peppers, cooked rice, diced tomatoes, tomato sauce, garlic powder, salt, and pepper.

Cook and stir the mixture until peppers are tender and everything is heated through.

Transfer the mixture to a greased 9x13 inch baking dish.

Sprinkle the shredded cheese on top.

Bake in the preheated oven for 25-30 minutes or until the cheese is melted and bubbly.

Garnish with fresh parsley before serving.
